High Capacity Random type cuts or a Hand
Pulled look.
The new Luthi PMD-2D belt-fed dicer / strip-cutter,
made completely of stainless steel, is ideally
suited for the cutting of a variety of meat products
including fresh chilled, frozen and tempered
(-10°C), cooked and hot (to 60°C). Coarse, medium
and fine shreds are achieved with higher throughput.
Cooked poultry, beef, veal, pork,
lamb and some varieties of raw meat and fish can be
processed at high yields with uniform appearance and
minimized fines. Product of predetermined slice
thickness is fed into a 220 mm (9") wide feed belt
which carries the product up to the dicing /
strip-cutting unit.

Slice thickness: For the best
results, firm products should not exceed 20 mm
(3/4") in thickness. The final thickness of the
square or rectangle will be the same thickness as
the original product.

A WIDE RANGE OF APPLICATIONS
Cooked ham,
cured ham (2 mm thickness), bacon strips (3 or 4
mm), chicken filets, turkey breasts, raw chicken
breasts or thigh meat, cooked chicken, chicken
livers, pork rind, beef, lamb (raw), fish
fillets (salmon, herring). Different pulleys,
gears, knife styles are available to change the
operating speed of the machine or to cut
products with loose or fibrous structures with
minimal slivering and fines.
