Dice Frozen or Cooked Product
The Luthi CHD-3D is
a rugged, heavy duty dicer / strip-cutter easily
capable of handling large pieces of meat in square,
rectangular or cylindrical form up to 220 mm in
width, diameter or length of cooked, fresh chilled,
and frozen tempered meat.
FOOD APPEARANCE IS ENHANCED
Our dicer/strip
cutter produces clean dices and strips with high
yields from large pieces of meat at a very low
temperature (to -13°C depending on the structure of
the product) making packaging easier since the
product is not sticky.
The CHD-3D utilizes a cutting action
to chop your product into the correct size for your
application. Since the product is not forced through
a grid, the fast rotating circular knives (for
strip-cutting) and crosscut knives (for dicing)
produce strips and cubes with few fines or tears and
optimal appearance is maintained.

The CHD-3D is
automated. The product can easily be fed in a
continuous motion, through a chute or conveyor to
the infeed chute. The CHD-3D processes up to 12,000
lbs per hour (6,000 kg) per hour) depending on the
product density, cut size and feeding method.
CUT SIZE & TYPE ARE ADJUSTABLE
Many sizes of
strip-cuts or dices are made possible by combining
various selections of circular knife spindle
spacings with different crosscut knife spindles.
WIDE RANGE OF APPLICATIONS
The Luthi CHD-3D is
considered to be the best meat dicing equipment
available in the market. The meat pieces can be cut
at -10°C with a capacity of 12,000 lbs per hour
(6,000 kg per hour) on a 13 mm dice.
Other successful applications are:
Bacon and pork rind, cooked and/or cured ham,
chicken (raw frozen), salami end-pieces, mortadella,
turkey breast and thigh meat, petfood (lung, liver,
heart), sausage, gyros, lamb, duck, fat, cheese for
pizza-topping, and more...
OPERATION IS SIMPLIFIED
The product is fed
into the center of the rotating impeller.
Centrifugal force generated by the impeller blades
causes the product to move in a circular path along
the inner surface of the drum.
An adjustable slicing gate at the
top of the drum allows the product to move outward
in relation to the edge of the reinforced,
stationary slicing knife. The distance between the
slicing gate and the knife edge determines the slice
thickness which can easily be adjusted by turning a
hand-wheel on top of the drum.
While the product is being pushed
through the slicing knife, the slices are pulled
through by the circular knives, which are
synchronized with the speed of the impeller blades.
This strip-cut product is removed from the circular
knives by the shear plate.
Since the strips are held between
the circular knives, they are fed at a uniform rate
into the crosscut knives. The crosscut knives cut
the strips into cubes or rectangular pieces and
eject them into the discharge chute.
